Dutch Stroopwafels/ 荷蘭焦糖煎餅

吃過了的日本和菓子抹茶わらび餅後, 今個星期就飛到荷蘭去嚐嚐這個傳統的小吃 - Stroopwafels 焦糖煎餅!
香脆的煎餅中間夾著一層薄薄的焦糖糖漿, 這個味道偏甜的小吃跟黑咖啡就是絕配!



One of my happiest thing in Winter, guess what? I can get caramel waffle (Stroopwafels) in Starbucks! They are THE BEST for my sweet caving and feel so satisfied every time. Today I am going to show you my vegan version for this traditional Dutch sweet snack!


Preparation time: 30 mins
Cooking time: 15 mins

Ingredients (約做7x 4"半徑煎餅粉量)
煎餅
中筋麵粉 250g, 過篩
糖 45g
純素牛油 85g
水 2/3杯
亞麻籽 1 tbsp, 磨成粉狀
泡打粉 1/2 tsp
雲呢嗱香油 1 tsp, 可省略
玉桂粉 少許

糖漿
黑糖 150g
純素牛油 60g
楓糖漿 3 tbsp
玉桂粉 1/4 tsp

器材
明火用蛋卷機或脆餅機

Ingredients (Make about 7x Stroopwafels, 4-inch diameter each)
Waffles
250g all purpose flour
45g sugar
85g vegan butter, melted
2/3 cup water
1 tbsp flaxseed, ground
1/2 tsp baking powder
1 tsp vanilla extract, optional
pinch of cinnamon powder

Syrup
150g dark brown sugar
60g vegan butter
3 tbsp maple syrup
1/4 tsp cinnamon powder

Equipment
Pizzelle maker




Direction
1/ 先預備煎餅。預備兩個大碗, 一個放濕的材料, 一個放乾的材料, 都分別混合好
2/ 慢慢將乾材料倒入濕材料碗內, 以刮刀混合
3/ 以小火加熱脆餅機, 將一小匙麵糰放到脆餅機中心處, 兩邊各自煎大概15秒, 至微微金黃色後即可離火。置於架上回溫至室溫。
4/ 預備糖漿。於一平底鑊內將所有糖漿材料以小火加熱, 確保所有糖都融掉, 無起粒粒狀。
5/ 襯糖漿還暖時, 趕快抹在兩塊煎餅上, 然後按壓令它們黏在一起。要小心糖漿還帶點溫度地湧出來啊~
6/ 可以享用囉~這個荷蘭焦糖煎餅跟黑咖啡真的是絕配!可以把煎餅蓋在熱咖啡上, 以咖啡的溫度令煎餅中間的糖漿融起來啊~

Direction
1/ Prepare the waffle batter. In two separate bowls, combine dry ingredients (pls sift the flour and sugar) and wet ingredients respectively
2/ Slowly fold in dry ingredients into the bowl of wet ingredient, mix well
3/ Heat the pizzelle maker in low heat, with ice cream scoop put a scoop of batter right at the center and heat both sides for about 15 seconds, time varies and pls check if they are done. When the color turns golden brown, remove and cool on rack
4/ Prepare the syrup. In a sauce pan put all ingredients into boil, until all sugar dissolved and no slumps.
5/ Combine. Spread the syrup on two waffles and press them together to stick with each other. Be careful syrup will be running out from the waffles and they are hot. Be quick to apply on all waffles as the syrup will become less runny when cool
6/ Serve with a cup of plain, hot coffee top with the Stroopwafels! Yummy soothing Sunday:)
