鬆餅裏頭有著挺新鮮的蘋果粒, 還有很大顆的萄萄乾, 為一向形象不夠健康的鬆餅挽回了一點分數!不過雖說吃下去沒啥牛油味道, 但為安心起見, 今天還是做了一個全素無麩質version! 而且還加入了燕麥片, 充滿膳食纖維, 吃下去每一口都有種「很健康」的感覺:)
Recently I have been craving for muffins, and was so attached to the "Apple Raisin Muffin" just downstairs of my office. Every bite I taste crunchy apple and chewy raisin. Apart from the ingredient that appears to be more healthy than those chocolate muffin, the texture just win over me.
For this Vegan and Gluten-free version, I have put rolled oats as one of the ingredient. Well. Don't expect they came out super buttery and spongy. These muffins are so dense with natural flavor, and just way healthier packed with dietary fiber.

Cooking time: 20 mins
Ingredient (約可做12個2"直徑鬆餅份量)
中筋麵粉* 1 1/4杯
燕麥片* 1 1/4杯, 另加鬆餅上作裝飾的份量
非常非常熟的香蕉, 攪拌成香蕉蓉 1杯 (約3隻小香蕉)
椰奶 1/2杯
檸檬 半個
天然庶糖 1/2杯
亞麻籽油, 或其他植物油 2 tbsp
亞麻籽 1.5 tbsp
水 3 tbsp
泡打粉 1 tsp
玉桂粉 1 tsp
大蘋果 1個 (我用的是美國的4016紅蘋果)
葡萄乾 1/3 杯
Ingredient (Makes 12x 2" diameter muffins)
1 1/4 cup all purpose flour*
1 1/4 cup rolled oats*, extra for topping
1 cup ripe banana, mashed into puree
1/2 cup coconut milk
1/2 lemon
1/2 cup raw sugar
2 tbsp flaxseed oil, or other vegetable oil
1.5 tbsp flaxseed
3 tbsp water
1 tsp baking powder
1 tsp cinnamon powder
1 big apple
1/3 cup raisin
*Pls use gluten-free flour and oats for GF version
Direction
1/ 先預熱焗爐於攝氏180度
2/ 將半個檸檬搾汁, 加到椰奶中。稍為攪勻, 備用
3/ 將亞麻籽磨成粉, 加入3 tbsp水攪勻, 備用
4/ 以食物處理器/ 攪拌機將燕麥片磨成幼細粉狀
5/ 蘋果批皮, 並切成大約0.5" x 0.5" 的大小, 備用
6/ 將熟香蕉徹底磨成幼細糊狀
7/ 於一個大碗內, 將香蕉糊, 椰奶, 亞麻籽, 油及糖, 順次序混合好
8/ 加入燕麥粉, 玉桂粉, 泡打粉及麵粉, 慢慢拌勻
9/ 當麵糊已完全混合好, 是時候加入主角 - 蘋果粒及葡萄乾了!
10/ 把鬆餅紙模放於焗模內, 小心地將麵糊倒進紙模中約3/4滿; 可於鬆餅面上撒上少許燕麥片作裝飾
11/ 入爐焗約20分鐘, 記緊要徹底放涼才脫模~這個健康的【全素蘋果葡萄乾燕麥鬆餅】便大告完成嚕!~
Direction
1/ Preheat oven at 180 degree Celcius
2/ Squeeze the juice of 1/2 lemon into the coconut milk, mix well and set aside
3/ Ground the flaxseed into meal, add water and mix well as flax egg. Set aside
4/ In a food processor/ blender, ground the rolled oats into fine coarse
5/ Peel the apple and slide into 0.5" x 0.5" cubes, set aside
6/ In a food processor/ blender, blend the banana until smooth.
7/ In a bowl, combine banana puree, coconut milk mixture, flax egg, oil and raw sugar
8/ Add oatmeal, cinnamon powder, baking powder, flour and mix well
9/ When the batter is well combined, fold in apple cubes and raisin into the batter
10/ Put muffin liners into the muffin tin. Fill the liner 3/4 full with the batter, sprinkle a few oats on the top
11/ Bake for 20 mins and these healthy muffins are done! :) Remember to let them cool down well!
