明天就是母親節啊~其實除了買花買蛋糕等指定動作外, 也可以親手做這個玫瑰蘋果撻送給媽媽。親手做的一份心意及誠意, 吃起來也份外的甜啊!

餡料主材料用了豆腐, 相比起外面的吉士醬絕對是健康低脂之選!而撻底如果想更方便的話, 可以使用免焗草莓芝士撻的撻底食譜呀。預祝天下間媽媽永遠漂亮健康啊:)

A vegan apple tart that in a lovely rose shape! This Rose Apple Tart is designed for Mother's Day, and, indeed I made this tart with my mum. I am just bad at peeling and slicing all fruits and my mum does a nice job! Credit to her as the hand candy :) Happy Mother's Day xoxo


Ingredient (1個7"焗模份量)
撻底
中筋麵粉 170g
片粟粉 36g
楓糖漿 60g
葵花籽油 65g
無糖可可粉 3g

餡料
硬豆腐 297g (我是使用Morinaga品牌)
鹽 適量
雲呢嗱香油 1/2 tsp
楓糖漿 4 tbsp
檸檬汁 2 tbsp
富士蘋果 2個


Ingredient (Makes 1x 7" tart pan)
Tart crust
170g pastry flour
36g tapioaa flour
60g maple syrup
65g sunflower seed oil
3g unsweetened cocoa powder

Filling
297g silken firm tofu (Morinaga brand was used here)
a pinch of salt
1/2 tsp vanila extract
4 tbsp maple syrup
2 tbsp lemon juice
2 fuji apples



Direction
1/ 焗爐預熱於攝氏180度。豆腐放於碟上, 撒上少許鹽出水
2/ 預備撻底。於大碗內加入所有撻底的材料, 用手搓至混合成粉糰。
3/ 將粉糰放到撻模上, 以手指按壓底部及模邊至均勻的厚度; 將超出模形的部份切除, 再以手指按壓出漂亮整齊的邊位。用叉在撻底及撻邊刺些小洞以助排氣, 入爐焗15分鐘後取出放涼。
4/ 預備餡料。按壓豆腐擠出水份, 將豆腐、雲呢嗱香油、楓糖漿及檸檬汁放於攪拌機內, 攪至幼細糊狀, 備用。
5/ 預備蘋果片。蘋果洗淨及去芯, 用刀切成薄片, 放於碗內。入微波爐以高火加熱40秒令蘋果片變得軟身。
6/ 將豆腐餡料倒至撻內, 至大概1cm 的厚度。將蘋果片由撻邊開始慢慢排列圍邊, 一層一層的舖排至中間形成玫瑰花形。立刻跟家人一同分享!:)

Direction
1/ Preheat Oven at 180 degree Celcius. Remove the package of Tofu and rest the tofu on a plate, add a pinch of salt on top of the tofu, set aside.
2/ Prepare the tart crust. In a mixing bowl combine all ingredient, knead well into a dough.
3/ Place the dough onto the tart pan, press onto the bottom part and edges with your fingers. Remove all excess dough at the sides and press a smooth surface with nice edges. Prick all over with a folk and bake for 15 mins.
4/ Prepare the filling. Press the tofu to release extra water. In a blender/ food processor, put all filling ingredient and blend until smooth, set aside.
5/ Prepare the topping. Rinse and core the apples, slice into very thin slices. Put all apples slides onto a bowl and microwave for 40 seconds under high heat. Apple slices should be soften now.
6/ Pour the tofu custard filling onto the tart crust, at about 1cm tall. Arrange apple slides from the sides to the center nicely that gives a rose shape. Chill in refrigerator for 4 hours before served.
