COOKIES - Many of you may associate with high fat, high sugar that makes with huge amount of butter. Today I am gonna bring you a healthy version, made with oats and just using little vegetable oil.
It's also Vegan! Definitely you won't feel guilty when having a bite of it!
Ingredient (Makes approx. 2 dozens 2-inch cookies)
2 cups old-fashioned oats
1/2 cup all-purpose flour
1/2 cup vegetable oil (I used flaxseed)
1/2 cup honey (you may replace with Maple syrup)
1/2 cup nuts (almond, walnuts, etc.), chopped
1/4 tsp salt
Assorted jams (I took some rose flavour)
Direction
1/ Preheat oven to 170 degree.
2/ Ground 1 1/2 cups oats to coarse meal. Just leave it in coarse texture and not necessarily to be very fine to keep its texture.
3/ Mix the grind oats with nuts, flour, salt and the remaining 1/2 cup oats.
4/ Pour the oil and honey into the mixing bowl, using a wooden spoon to mix well.
5/ Let it sit for 10 mins. If the mixture is too wet and runny, you may slightly add more flour until you see the dough can stick at the sides of the mixing bowl.
6/ Use a spoon to transfer the mixture onto baking sheet. The size of each cookie should be around 2 inches. I use two spoons together to make the cookies look more circle-shaped.
7/ Use a stirring spoon pressing the "thumb print" on each cookie and add jam of your choice.
8/ Bake for 15 mins. You may shorten the time if the cookies turn brown. Transfer to the rack and let it cool for another 15 mins.
9/ Store in airtight jar/ container and you can keep it for 2 days. Or else those cookies will turn sticky and humid very soon.
For Oat lovers like me you surely cannot miss this recipe! I feel it's like a variation of granola bars and if you do not have oats and nuts with you, you could replace it with muesli.
